Our story
Rising Sourdough Bakery is an Auckland micro-bakery devoted to bread with character: crisp, caramelised crusts, expressive crumbs, and flavour that only time can create.
Why we bake
We began with a simple belief: everyday bread can be exceptional without becoming complicated. Our loaves start with flour, water, salt, and a mature sourdough culture. The rest is careful attention.
We mix in small batches, ferment slowly, shape by hand, and bake until the crust reaches a deep chestnut colour. The result is bread designed for real tables—morning toast, shared lunches, and the heel eaten on the way home.
